Egg Roll Bowl

Are you craving Chinese takeout but want to keep it clean?

If you are working on finding quick, healthy meals ... 

This Egg Roll Bowl hits the spot with all the flavours of a classic egg roll - but without the deep frying. Plus, it is super customizable. 

Here is your recipe (makes 4 servings)👇

Ingredients: 

  • 2 tbsp sesame or coconut oil
  • 3 cloves of minced garlic
  • 1/2 cup diced onioin
  • 2-3 tbsp of diced fresh ginger
  • 1 pound ground chicken
  • salt and pepper
  • 1 tbsp of sirarcha or hot sauce
  • 14 oz bag of your favourite coleslaw mix
  • 1 tbsp of gluten-free soy sauce or coconut aminos
  • 1 tbsp of vinegar (rice vinegar is more authentic)

Optional: toasted sesame seeds

Instructions: 

  1. Heat the oil in a large skillet over medium-high heat. Saute the garlic and onion until the onion is soft. 
  2. Add the ginger and saute for 1-2 minutes, until fragrant.
  3. Stir in the ground chicken, a pinch of salt and pepper, and hot sauce. Cook until the chicken is done. 
  4. Add in the coleslaw mnix, soy sauce (or coconut aminos) and vinegar. Cook until the slaw is tender. 
  5. Sprinkle with toasted sesame seeds if you like and serve :)
